Vegan pancake variations

Pancakes for breakfast or brunch are such a classic and certainly not something I would want to give up just because I am vegan. Thankfully I found a way to make delicious vegan pancakes – below is the basic recipie. You can make many variations of this recipie by adding blueberries or cocolate chips to the dough if you are feeling especially endulgent or just add some cocoa powder to the mixture.

Maybe add some fruit, nuts or maple syrup on top – or more chocolate chips if you are feeling decadent.

Ingredients

  • 3 small ripe bananas
  • 350g plain flower
  • 350ml vegan milk (I love oat milk but soy would also be great)
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • Pinch of salt

Instructions

  1. Mix together all dry ingredients (flower, sugar, baking powder and salt) in a bowl
  2. Mash the bananas well and add milk
  3. Add wet and dry mixes together – I like to use a hand held bender to get a silky smooth texture – but if you mashed the bananas well the dough will be perfect.
  4. Time to turn up the heat – get a frying pan on medium-high heat add some vegtale oil (or I like to use coconut oil) and start ladling out small portions of the dough. I tend to make three small pancakes in the frying pan at once.
  5. Don’t be afraid to add a bit more flower or milk if the first batch comes out to runny or too thick.
